Savory Goat Cheese Tart
We like to use our chevre in a lot of creative ways. We always try to use it for dishes to bring to events so we can introduce people to new ways to enjoy goat cheese. One of my favorite ways to do this is with a Savory Goat Cheese Tart, which is easy to put together, and allows for a lot of variety
This savory tart comes together quickly which makes it the perfect dish to serve warm for a dinner in your home. It's also a great way to use up any goat cheese nearing the end of it's life in your fridge, and you can get creative with things you can add to it.
Equipment Needed:
Stand Mixer (optional - you can also mix with a bowl and large spoon)
Flat surface for rolling
Butter Knife
Oven
Baking Sheet
Tin Foil
I like to bake this tart on tin foil, because it keeps the baking sheet clean, and, you can use it to wrap the tart for transport, or to keep it warm before serving.
Ingredients:
2 Puff Pastry Sheets
2 cups Unflavored Goat Cheese (Chevre) - room temp.
2 Cloves of Fresh, pressed, Garlic
1/2 tsp. Salt
1 Jar - Maple Bacon Onion Jam
1 Egg - beaten

Instructions:
Preheat oven to 400 F
Make sure your puff pastry is thawed. Place it on a flat, floured surface and roll out gently until it's a fairly even shape, not too thin. Let it rest while you prep the filling
Mix together the goat cheese, salt and fresh garlic. Blend until the goat cheese is smooth and soft and spreadable.
Roll up the edges of the puff pastry and pinch in place to create a border for the filling
Divide the goat cheese mixture in half and half evenly on each puff pastry. Go slow to be sure not to tear the dough.
Spread a thin layer of the Maple Bacon Jam over the goat cheese
Take the beaten egg and brush it gently over the rolled edge with a pastry brush
Slide the tart onto a tin foil covered baking sheet and put into the oven. Bake for 35 minutes, or until the edges are a nice golden brown
It's very easy to modify this recipe in some creative ways. Put blanched asparagus spears on top of the goat cheese tart instead of jam and sprinkle it with chopped bacon when it comes out of the oven. Layer heirloom tomato slices over the goat cheese instead for an elegant vegetarian dish. I love to layer sauted zucchini and summer squash over the goat cheese layer in alternating colors - it looks great and helps to use up abundant summer produce.
